Ingredients:

For the Chicken Filling:

  • 1.5 lbs boneless, skinless chicken breasts or thighs (or use shredded rotisserie chicken for a shortcut)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth or water
  • 1/2 cup salsa (mild or spicy, your choice)

For the Tacos:

  • 10-12 taco shells (gluten-free if needed)
  • 1 cup shredded Mexican blend cheese (use dairy-free cheese if needed)

Optional Toppings:

Salsa or hot sauce

Shredded lettuce

Diced tomatoes

Sliced black olives

Sour cream (use dairy-free if needed)

Diced avocado or guacamole

Recipe:

1. Prepare the Chicken Filling:

  1. Heat olive oil in a skillet over medium-high heat. Add the chicken breasts or thighs and sear on both sides until golden brown (about 2-3 minutes per side).
  2. Sprinkle the chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper over the chicken.
  3. Add the chicken broth and salsa to the skillet. Cover and simmer for 12-15 minutes, or until the chicken is cooked through (165°F internal temperature).
  4. Shred the chicken with two forks and mix it into the sauce. Simmer for another 2 minutes to coat the chicken with flavor.

2. Assemble the Tacos:

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the taco shells upright in a baking dish (you can use rolled-up aluminum foil to keep them standing).
  3. Fill each taco shell with the shredded chicken mixture, then sprinkle with shredded cheese.

3. Bake the Tacos:

  1. Bake in the oven for 10 minutes, or until the cheese is melted and the shells are slightly crispy.

4. Serve and Enjoy:

  • Top each taco with your favorite toppings and serve immediately.
