- 1/4 teaspoon black pepper
- 1/2 cup chicken broth or water
- 1/2 cup salsa (mild or spicy, your choice)
For the Tacos:
- 10-12 taco shells (gluten-free if needed)
- 1 cup shredded Mexican blend cheese (use dairy-free cheese if needed)

Recipe:
1. Prepare the Chicken Filling:
- Heat olive oil in a skillet over medium-high heat. Add the chicken breasts or thighs and sear on both sides until golden brown (about 2-3 minutes per side).
- Sprinkle the chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper over the chicken.
- Add the chicken broth and salsa to the skillet. Cover and simmer for 12-15 minutes, or until the chicken is cooked through (165°F internal temperature).
- Shred the chicken with two forks and mix it into the sauce. Simmer for another 2 minutes to coat the chicken with flavor.
